Ingredients
  

For the Chicken:

  • 500 grams chicken boneless or with bone, cut into medium pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons oil

For the Sambal Sauce:

  • 3 tablespoons sambal paste store-bought or homemade
  • 1 medium onion finely chopped
  • 4 garlic cloves minced
  • 1 teaspoon ginger grated
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons tomato sauce
  • ½ cup water
  • Salt as needed

Instructions
 

Step 1: Marinate the Chicken

  • Take the chicken pieces in a bowl. Add salt, black pepper, and lemon juice. Mix well and keep it aside for 15–20 minutes. This helps the chicken become tender and flavorful.

Step 2: Cook the Chicken

  • Heat oil in a pan on medium flame. Add the marinated chicken and cook for 6–8 minutes until it becomes light golden brown. Remove and keep aside.

Step 3: Prepare the Sambal Base

  • In the same pan, add a little more oil if needed. Add chopped onion and cook until soft.
  • Now add garlic and ginger. Cook for 1 minute until fragrant.

Step 4: Add Sambal and Sauces

  • Add 3 tablespoons of sambal paste. Cook for 2–3 minutes.
  • Now add soy sauce, tomato sauce, and sugar. Mix well. Cook until oil starts separating from the mixture.

Step 5: Combine Chicken and Sauce

  • Add the cooked chicken back to the pan. Mix well so the chicken is fully coated with sambal sauce.
  • Add ½ cup water and cook for 5–7 minutes on low flame. Stir occasionally.

Step 6: Final Touch

  • Taste and adjust salt if needed.
  • Garnish with spring onions or coriander leaves.
  • Your delicious sambal chicken is ready to serve!
