Equipment

  • 1 Saucepan
  • 2 Mixing bowl
  • 3 Whisk or Spoon
  • 4 Tray or plate
  • 5 Refrigerator
  • 6 Deep frying pan or kadhai
  • 7 Slotted spoon
  • 8 Paper towels

Ingredients

  • Elbow macaroni – 2 cups
  • Butter – 2 tbsp
  • All-purpose flour maida – 2 tbsp
  • Milk – 2 cups
  • Cheddar cheese grated – 1.5 cups
  • Mozzarella cheese – 1 cup
  • Salt – as per taste
  • Black pepper – ½ tsp
  • Garlic powder – ½ tsp

Instructions

Step 1: Cook the Pasta

  • Boil water with a little salt. Add macaroni and cook until soft but not mushy. Drain and keep aside.

Step 2: Make the Cheese Sauce

  • Heat butter in a saucepan on low flame. Add flour and mix continuously to form a smooth paste.
  • Now slowly add milk while whisking. Keep stirring so no lumps form.
  • Once it thickens, add cheddar and mozzarella cheese. Stir until everything melts into a creamy sauce.

Step 3: Combine

  • Add cooked macaroni into the sauce. Mix well so each piece gets coated. Add salt, pepper, and garlic powder.

Step 4: Chill the Mixture

  • Spread the mixture on a tray. Refrigerate for 2–3 hours. This step is important… it helps the bites hold shape later.

Step 5: Shape the Bites

  • Once firm, cut into small squares or roll into balls.

Step 6: Coat Properly

  • Dip each piece in flour, then egg, then breadcrumbs. This layering makes them crispy.

Step 7: Fry Until Golden

  • Heat oil in a pan. Fry the bites until golden brown and crispy. Remove and place on paper towels.
  • Your Mac and Cheese Bites are ready to serve.

Notes

For perfect Mac and Cheese Bites, chilling the mixture well helps them hold shape easily. Keep the oil at medium heat for even frying and a crispy texture. Coat each bite properly with flour, egg, and breadcrumbs for best results. If baking or air frying, lightly brush oil on top for a golden finish. Serve them hot… because that soft, cheesy center tastes best fresh.
