Ingredients
  

  • 3 large egg yolks
  • 1/2 cup unsalted butter melted
  • 1 tablespoon lemon juice
  • 1 tablespoon warm water
  • Salt to taste
  • A pinch of black pepper or cayenne pepper optional

Instructions
 

Step 1: Melt the Butter

  • Start by melting the butter in a small saucepan over low heat. Once melted, keep it warm but not boiling.
  • Set the butter aside.

Step 2: Prepare the Egg Mixture

  • In a heatproof bowl, add:
  • Egg yolks
  • Lemon juice
  • Warm water
  • Whisk the mixture until it becomes light and slightly frothy.

Step 3: Use Gentle Heat

  • Place the bowl over a saucepan with lightly simmering water. This method is called a double boiler and helps prevent the eggs from scrambling.
  • Make sure the bowl does not touch the water.
  • Continue whisking constantly.

Step 4: Add the Butter Slowly

  • Now slowly pour the melted butter into the egg mixture while whisking continuously.
  • This step is very important. Adding the butter slowly helps the sauce emulsify, meaning the butter and egg mixture blend into a smooth sauce.

Step 5: Season the Sauce

  • Once the sauce becomes thick and creamy, remove it from the heat.
