Equipment

  • 1 Saucepan (medium size)
  • 2 Whisk (very important for smooth texture)
  • 3 Measuring cups + spoons
  • 4 Spatula or wooden spoon
  • 5 Grater (for fresh cheese – trust me, it melts better)

Ingredients

  • Butter – 2 tablespoons
  • All-purpose flour maida – 2 tablespoons
  • Milk – 2 cups preferably warm
  • Cheddar cheese – 1.5 cups grated
  • Salt – ½ teaspoon adjust to taste
  • Black pepper – ½ teaspoon
  • Garlic powder – ¼ teaspoon optional but recommended
  • Mustard powder – ¼ teaspoon optional… but wow, it adds depth!

Instructions

Step 1: Melt the Butter

  • Take a saucepan and melt the butter on medium heat. Don’t rush this… burnt butter = ruined sauce.

Step 2: Add Flour (Make Roux)

  • Now add the flour and whisk continuously.
  • Cook it for about 1–2 minutes until it smells slightly nutty.
  • This step is super important—it removes the raw flour taste.

Step 3: Add Milk Slowly

  • Now here’s the trick… add milk gradually while whisking.
  • Don’t dump it all at once! Otherwise… lumps
  • Keep whisking until the mixture becomes smooth and slightly thick.

Step 4: Add Cheese

  • Lower the heat and add grated cheese slowly.
  • Stir continuously until it melts completely.
  • And wow… you’ll see that creamy magic happening

Step 5: Season It

  • Add salt, pepper, garlic powder, and mustard powder.
  • Mix well… taste it… adjust if needed.

Step 6: Final Texture Check

  • If it feels too thick, add a little milk.
  • Too thin? Cook for another minute.
  • And done! Your homemade cheese sauce recipe is ready
