- For the Pie Crust
- 2 ½ cups all-purpose flour
- 1 cup cold unsalted butter cut into cubes
- 1 teaspoon salt
- 1 tablespoon sugar
- 6 –8 tablespoons ice water
- For the Apple Filling
- 6 –7 medium apples Granny Smith or Honeycrisp work best
- ¾ cup sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons butter
- Optional for topping:
- 1 egg for egg wash
- 1 tablespoon sugar for sprinkling
Step 1: Prepare the Pie Dough
Start by making the pie crust.
In a large bowl, mix flour, sugar, and salt.
Add the cold butter cubes to the mixture.
Use your fingers or a pastry cutter to mix until the texture looks like coarse crumbs.
Slowly add ice water, one tablespoon at a time, until the dough comes together.
Divide the dough into two equal portions.
Wrap them in plastic wrap and place in the refrigerator for 30–60 minutes.
Chilling the dough helps create a flaky and tender crust.
Step 2: Prepare the Apple Filling
While the dough is chilling, prepare the apple filling.
Peel and slice the apples into thin pieces.
Place the apple slices in a large bowl.
Add sugar, cinnamon, nutmeg, flour, lemon juice, and vanilla extract.
Mix everything well so the apples are evenly coated.
The flour helps thicken the filling while baking.
Step 3: Roll the Dough
After chilling the dough, take one portion out of the refrigerator.
Sprinkle some flour on your working surface.
Roll the dough into a 12-inch circle using a rolling pin.
Carefully place the rolled dough into a 9-inch pie dish.
Press it gently into the dish and trim the edges if necessary.
This will be the bottom crust of your pie.
Step 4: Add the Apple Filling
Now it’s time to add the apple mixture.
Pour the prepared apple filling into the pie crust.
Spread the apples evenly.
Add small pieces of butter on top of the apples.
Butter adds richness and enhances the flavor of the pie.
Step 5: Add the Top Crust
Option 1: Full Top Crust
Place the rolled dough over the filling.
Seal the edges with the bottom crust.
Cut small slits on top to allow steam to escape.
Option 2: Lattice Top
Cut the dough into strips.
Arrange the strips in a crisscross pattern.
A lattice crust gives the pie a beautiful and classic look.
Step 6: Brush and Bake
Before baking, brush the top crust with beaten egg and sprinkle a little sugar.
This helps the crust turn golden and shiny.
